Restaurants

Since the fall of 2010, Gekås Ullared has run restaurant operations on site in the department store. This is to further serve our customers and give them a good shopping experience. Today, Gekås Restaurangen in the department store is a natural and appreciated part of the visit.

Purchasing

When we make our purchases, we start with a planning exercise where the need for products is reviewed. We check the supplier’s environmental and sustainability work by looking at their certificates for this. If we have the opportunity, we like to buy locally produced and locally grown. Everything is purchased through various Swedish wholesalers and suppliers, which means that we do not import anything ourselves to Restaurangbolaget. One thing that is always followed up with the supplier is that they have the right permits and certificates to be able to supply food to Restaurangen in Sweden.

Transportation

We try to gather most of our purchases via as few suppliers as possible and have a large main supplier from which we buy most of the food for Restaurangbolaget. The transportation of food is mainly done by truck. It is important that the goods are transported in the right way, especially when it comes to food such as refrigerated and frozen goods.

Storage/Manufacturing

We try not to stock more than we can use in about 5 days. This is because there are a lot of perishable products that have “best before” dates. It is also because we do not have much space in our departments to store products for a longer period of time. We always try to keep our calculations so that all portions are the same grade and size.

Sales/Serving

In order to offer fresh and freshly prepared food, we produce smaller quantities at a time during the times we are open in our Restaurangen. This also leads to less food waste.

Recycling and recovery

Sorting at source is a matter of course for us and this is done on virtually everything. The leftover food is sorted and ground in the food mill for further processing and production of bio-gas. Plastic, sheet metal, cartons and other packaging are separated and recycled.

Raw materials

Our raw materials come from our Swedish wholesalers and suppliers who provide us with good food from their producers. We like to see local and locally produced ingredients used as much as possible.

Chicken – only Swedish chicken in the department store Restaurangen.

In many respects, Swedish chicken production complies with higher standards in terms of Swedish laws and other regulations than in other countries. The added value is based on, among other things:

  • Animal health & disease control – Swedish chickens are healthy
  • Antibiotic use is low
  • Animal welfare in the form of national animal welfare rules
  • Environment & climate – low climate impact
  • Swedish countryside – contributing to an open landscape


Eggs – Only eggs from free-range hens in clean shell products and our own products.
Fish – MSC or ASC certified fish is served in our restaurants.
Carbonation – Green Origin: Climate-smart carbonation in our beverage machines.
Coffee – UTZ certified coffee is served in our restaurants and cafés.
